Job Summary

This role is based at the Max Rubner-Institut (MRI) in Kulmbach within the Institute for Safety and Quality of Meat. As a Research Scientist, you will join an interdisciplinary team working on the 'NitRed' project, which focuses on reducing nitrate and nitrite levels in meat products. Your daily responsibilities include developing and validating HPLC-MS/MS methods to detect N-nitrosamines, planning and producing model sausages under controlled conditions, and performing statistical data analysis. You will also support project reporting and present your findings through international publications, posters, and lectures. This position offers a unique opportunity to contribute to federal research and public policy advice within a prestigious scientific network. The role is part-time (65%) and fixed-term, providing a collaborative environment with flexible working arrangements and the chance to work on cutting-edge food safety research.

Required Skills

Education

Master's degree in Food Chemistry, Chemistry, Bioanalytics, or a comparable field of study.

Experience

  • Professional experience with HPLC-MS/MS systems and mass spectrometric analysis
  • Practical experience in sample preparation of meat products for organic compound analysis
  • Experience in authoring international scientific publications in peer-reviewed journals as a first author
  • Experience in the statistical evaluation of scientific experimental data
