Job Summary

This role is based at the Max Rubner-Institut (MRI) in Kulmbach within the Institute for Safety and Quality of Meat. As a Research Scientist, you will join an interdisciplinary team working on the 'NitRed' project, which focuses on reducing nitrate and nitrite levels in meat products. Your daily responsibilities include developing and validating HPLC-MS/MS methods to detect N-nitrosamines, planning and producing model sausages under controlled conditions, and performing statistical data analysis. You will also support project reporting and present your findings through international publications, posters, and lectures.
