Job Summary

The Max Rubner Institute is seeking a highly motivated Student Research Assistant to join the Institute for Safety and Quality in Meat at the Kulmbach location. This part-time, fixed-term position (April 2026 – March 2027) involves supporting a joint research project investigating the effects of reducing nitrate/nitrite additives in meat products on the formation of N-Nitrosamines. Day-to-day tasks include assisting with sample preparation, conducting HPLC-MS/MS measurements, supporting statistical data evaluation and result compilation, and performing literature research. The ideal candidate is currently enrolled in a relevant Bachelor's or Master's program (e.g., Food Chemistry, Chemistry, Bioanalytics), has completed at least the second semester, and demonstrates strong German language skills, motivation, and teamwork ability. This role offers valuable research experience in a leading federal institute focused on nutrition and food safety.
