Job Summary

This role involves supporting a research project focused on characterizing and evaluating dry processing methods for cereal grains as food raw materials, specifically malt. The assistant will be responsible for the independent execution, preparation, and follow-up of grinding experiments at both laboratory and technical scales, including protein shifting in flours using a fine sifter. Key duties include performing chemical and physical analyses according to plan, characterizing the techno-functional properties of the milled products and derived foods, and managing sample logistics (storage, numbering, cleaning). This position requires a completed vocational training as a Food Technology Assistant or Chemical Laboratory Technician and specific experience with cereal raw materials and food chemistry analysis. The successful candidate will join the Max Rubner Institute, a federal research institution for nutrition and food, offering a varied, full-time, and fixed-term contract until November 2028.
