Job Summary

This role is based at the Institute for Safety and Quality of Meat in Kulmbach, where you will join an interdisciplinary team focused on the 'NitRed' project. The primary focus of the position is investigating the reduction of nitrate and nitrite in meat products and its impact on microbiological safety, organoleptic properties, and N-nitrosamine formation. Day-to-day responsibilities include developing and validating HPLC-MS/MS methods, producing model sausages under defined conditions, and performing statistical data analysis. You will also support project reporting and present scientific findings through posters, lectures, and peer-reviewed publications. This position is ideal for a researcher looking to contribute to public health and policy advice within a federal research institute. The role offers a unique opportunity to work in a collaborative scientific network with flexible working conditions and mobile work options within Germany, though it is a part-time, fixed-term appointment.

Required Skills

Education

Master's degree in Food Chemistry, Chemistry, Bioanalytics, or a comparable field of study.

Experience

  • Practical experience with HPLC-MS/MS systems for analytical chemistry
  • Professional experience in sample preparation of meat products for mass spectrometric analysis of organic compounds
  • Proven experience in creating international scientific publications in peer-reviewed journals as lead author
  • Experience in statistical evaluation of scientific experiments
