Job Summary

This role involves working as a Scientific and Technical Research Associate on the "Fish Valorization 360°" project, focusing on circular economy principles by innovatively utilizing fish processing by-products, specifically Redfish skin, to maximize resource conservation and value creation. Day-to-day tasks include characterizing fish by-products for proteins and bioactive peptides (e.g., antihypertensive, antimicrobial), conducting stability studies, and developing/optimizing enzymatic digestion processes for protein/peptide release, scaling up from lab (15mL) to fermentation (5L) scale. The associate will also purify, identify, and quantify these bioactive compounds using LC-MS, and perform in-vitro assays (e.g., ACE-inhibition, inhibition zone tests) to confirm bioactivity. The ideal candidate holds a degree in Biotechnology, Bioprocess Engineering, Bioanalytics, or a related field, and possesses hands-on experience in protein analysis, bioprocess engineering, and quality management systems like HACCP. This position offers a unique opportunity to drive sustainability and innovation within the seafood industry.
