Job Summary

This role is for a highly motivated Research Scientist/Doctoral Candidate to join the Max Rubner Institute in Detmold, focusing on the federally funded project "KaProBast." The core mission is to enhance the nutritional value of potato products by incorporating sustainably sourced dietary fibers derived from oilseed and potato processing by-products. Day-to-day responsibilities involve a strong combination of food technology and analytical chemistry. You will conduct practical work in the extraction pilot plant, characterize fiber-enriched extracts for quality aspects (e.g., contaminants, polysaccharides, phenols), and perform instrumental analysis, notably using HPLC (SEC, HPAEC) and GC-MS, alongside rheological investigations. Key requirements include a Master's degree in Food Chemistry or a related field, knowledge of instrumental analytics, and strong German and good English communication skills. This position is particularly attractive as it is designed to support the candidate's scientific qualification, offering a structured path toward obtaining a PhD while working part-time (65%) in a future-oriented federal research institute.
